PROPER COLD HOLDING TEMPERATURES
TCS food not maintained at 5°C (41°F) or below. - Holding onion soup at 120 degrees F at the warming unit. Other two soups were holding at 135 degrees F or above. Operator stated that they were cooling down the soups. Must use proper cooling method to meet the cooling parameter.
