Sushi, Sanitizer, and a Whole Lot of Cold Holding Woes: May 25–31 in Review

Summer's heating up in the Ville, and unfortunately so were a few coolers that had no business warming past 41°F. From the Bourbon District to Bardstown Road, this week's inspections served up a heavy dose of temperature troubles. Let's dig in.

A Quick Refresher on How the Grades Work in the Ville

  • Grade A (green): A passing grade indicating a generally safe facility. Score of 85–100 with no priority violations — serious issues most likely to cause foodborne illness, such as improper food holding temperatures.
  • Grade B (blue): Facility is "under review" while health officials work with them to pass future routine inspections. Issued after failing two routine inspections in a row, or automatically during a follow-up inspection if the facility had to close because of an imminent health hazard (regardless of prior grades). Patrons should be mindful.
  • Grade C (red): Facility has failed its inspection. Issued for any of these reasons: (1) one or more priority violations, such as poor hygienic practices, lack of hot/cold water, or improper sanitizing — even with a score as high as 98; (2) score below 85 due to a high number of non-priority violations; or (3) an imminent health hazard requiring closure (e.g., infestation, loss of electricity or water). These are serious and require a follow-up within 7–10 days.
  • Priority violations: High risk for foodborne illness. Even one is enough to drop a place to a C.

Ten follow-ups happened this week, and most walked away with their dignity (and their A) restored:

Cautionary Cuisine: A Rough Week for Refrigeration

Eleven spots landed a C grade this week, and the culprit was clear: cold holding temperatures were the star of the show, and not in a good way.

  • Holiday Inn (84) — No sanitizer available for dishwashing (briefly corrected on-site), plus salmon filets sitting at 50-54°F in a roll-top cooler. LouVUE's Take: A double-whammy of sanitizing and temperature issues. Glad the fish got tossed instead of served.
  • Ace Sushi @ Meijer #160 (96) — Missing parasite destruction records and HACCP paperwork gaps. LouVUE's Take: A high score reminds us a C isn't always about dirty kitchens — sometimes it's about missing the paper trail that proves raw fish is safe to serve raw.
  • Daisuki Sushi (90) — Cross-contamination from raw beef without a glove change, plus raw fish sitting at 46-49°F. LouVUE's Take: Two priority violations here — this one warrants a closer look at your next visit.
  • Subway #12182 (97) — Reach-in cooler up to 55°F. LouVUE's Take: Great score, one bad cooler. Worth a follow-up, not a boycott.
  • Game Restaurant (90) — Cold holding failures across meat, dairy, and produce, no consumer advisory for undercooked items, and an unlabeled Pine-Sol bottle on a prep surface. LouVUE's Take: That's a full-plate violation trio. The chemical mix-up alone is a good reminder why labeling matters.
  • Culver's (91) — Dish machine not sanitizing, steamer holding meat/gravy at just 120°F (well below the required 135°F). LouVUE's Take: Butter burgers deserve better temp control.
  • El Mundo (94) — Shrimp, eggs, fish, and beef all found at 55-65°F. LouVUE's Take: That's a walk-in cooler that needed attention yesterday.
  • Kabuki Food Truck (95) — Backflow issue with potable water hose. LouVUE's Take: A plumbing fix away from a clean bill of health.
  • Fire Oven Pizza (95) — Cold holding unit at 45-50°F. LouVUE's Take: One bad unit, otherwise a strong score.
  • Pinnacle Management of Park Louisville (96) — Dish machine sanitizer line cracked. LouVUE's Take: A mechanical failure, quickly identifiable — should be an easy fix before the follow-up.

Remember: a C means a required follow-up, not necessarily a five-alarm fire. Several of these are one fixable issue away from an A.

The Check, Please: Keep Your Cool (Literally)

If this week taught us anything, it's that 41°F is the line in the sand — and a lot of coolers crossed it. Kudos to our top scorers like Meijer #160, Grit and Griddle, Drake's, Off The Rails Tasting Room & Wire Depot, and Starbucks, who all hit a perfect 100.
